Ingredients:
2 bell peppers (with tops cut off and insides removed)
Stuffing:
1/2 lb. ground beef
1.2 cup long grain white rice (cooked)
1/4 cup diced white onion
1/4 can tomato paste
2 stewed tomatoes (peeled and diced) OR 1 can stewed tomatoes
cumin, garlic salt, chili powder, salt, pepper
2 green chilis (roasted, peeled and diced) ---OR 1 can diced green chilis
Toppings:
1 cup shredded colby jack OR cheddar cheese
1/4 cup diced green onions
1/4 cup diced fresh tomatoes
1/8 cup black olives
1/2cup fried tortilla strips
sour cream for topping
Directions:
1. Brown your ground beef.
2. Add cooked rice, diced white onion, tomato paste, stewed tomatoes, green chilis and seasonings to taste. let simmer on med-low about 15min.
3. Pre-heat oven to 375*
4. Place bell peppers in baking dish Pour meat mixture into each pepper. Pour remaining meat mixture into the dish.
5. Place in oven for 15min.
6. Shred cheeses, dice green onions, tomatoes, olives and fry your tortilla strips while peppers cook.
7. After 15min. remove peppers, reduce oven heat to 350*
8. Top peppers with cheese, green onions, tomatoes, tortilla strips and black olives.
9. Place baking dish back in oven and cook an additional 15min. at 350*
(Served with warm tortilla, and corn con chili salsa)
